TODD ENGLISH’S DA CAMPO OSTERIA HIRES NEW EXECUTIVE CHEF

FT. LAUDERDALE, FL – June 8, 2010 – Todd English’s Fort Lauderdale based da Campo Osteria announced today the hiring of new Executive Chef, Joshua Kirk-Josef Hedquist.  Hedquist joins the famed Northern Italian eatery with a strong background and refined experience at some of South Florida’s top eateries.

Constantly striving to innovate, Hedquist brings young and fresh energy to da Campo Osteria where his culinary vision is to set a new standard in the industry by promoting integrity and utilizing a customer service driven philosophy that takes a more personalized approach, catering to each individual patron.

Hedquist began his professional career in Minnesota, working with prestigious chefs such as Jean-Georges Vongerichten where he was part of the opening team of Chambers Kitchen at the popular Chambers Hotel.  He also trained under 2009 regional James Beard award winner, Chef Tim Mckee, an experience to which Hequist attributes a large part of his practical skills.

In 2008, Hedquist joined the Boca Raton Country Club as the executive sous chef.  Having gained significant experience overseeing daily menus, banquets and private parties, he was hired at Las Palmas in Hollywood, Florida as executive chef.  There he was responsible for developing the new lunch and dinner menus as well as managing all operations and staff.  Most recently, Hedquist held the executive chef role at the renowned Falcon House restaurant in Delray Beach, Florida.  He designed the innovative dinner menu with a focus on organic green cuisine using the freshest seasonal ingredients.

Born in a family of cuisiniers, Hedquist had an innate desire to pursue a career in the kitchen.  He worked behind the scenes from an early eage at his mother’s café’s washing dishes to make money and was intrigued by the “masters” of the kitchen.  He found pleasure in the chaos behind the scenes, slowly working his way up.

Hedquist is an advocate for purchasing local seasonal product from South Florida vendors.  He is a graduate of the School of Culinary Arts at the Art Institute of Minneapolis in Minnesota.
